You're correct, they're absolutely not keto friendly, and maltitol cannot be deducted to figure net carbs. It truly stuns me that brands get away with this considering the GI for maltitol--Atkins and Russell Stover are two others that do it too.

Sugar is 100 on the Glycemic Index. Maltitol is a very high GI-36 and can kick you out of keto. Erythritol is a zero.

However, FDA nutrition labeling guidelines do not allow us to use that calculation for the facts on our packaging. Per the FDA and most dietitians, the correct formula for arriving at net carbs is to subtract 100% of fiber and 50% of sugar alcohols. That is how we arrived at the 12g net carb number you mentioned. Let's do the math. A serving is five pieces (relatively large caramels - bigger than the average tootsie roll). One serving has 12 net carbs, based on the standard dietitian's estimate that sugar alcohol is absorbed at a rate 50% less than regular sugar. That's 2.5g net carbs per piece! As long as you're good with portion control, you will do just fine eating 2-3 of these a day. By the way, even if you count every sugar alcohol as a full carb, 25g/5 pieces = only 5g carbs a piece. This is still markedly better than your alternatives for a sweet tooth. You may be interested to know why we use maltitol. Is it the best alternative sweetener for keto macros? Certainly not (but then again, without it goodbye to the smooth, soft texture caramel lovers crave). Is it better than sugar or corn syrup? Absolutely! Xylitol bad for my pups

Decent taste, but I missed the Xylitol ingredient when ordering and had to throw them away. Xylitol is highly toxic and deadly to dogs, and most dogs love to eat just about anything, so not worth the risk. The taste was almost coffee like and good texture.
